My sister KayLynn is great about finding healthy, tasty recipes and this one is no exception. We made a batch tonight and they are delicious. My kids have gobbled them up and I had to restrain myself to stop at one. I hope you enjoy them as much as we did.
Bran Flax Muffins
1.5 cups white flour (I used half white, half whole wheat)
3/4 cup ground flaxseed (we bought whole flax seed and ground it in our coffee grinder)
3/4 c. oat bran
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 c. finely shredded carrots
2 peeled and shredded apples
1/2 c. raisins (optional)
1 c. chopped nuts (optional)
3/4 c. milk
2 beaten eggs
1 tsp. vanilla
Mix together flour, flaxseed, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon in a large bowl. Stir in carrots, apples, raisin, and nuts. Combine milk, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 c. full . Bake at 350 degrees for 15-20 minutes. Yields 15 muffins.
Note. KayLynn says that she has used all whole wheat flour, wheat bran instead of oat bran, and added more apples when she didn't have carrots. According to her, all ways are good.
